A chef does not cook fish, he studies it, explores its anatomical structure, habits, context and then transforms it into something unexpected. Originally from Somma Vesuviana in Campania, Francesco Sodano brings with him the sea as an emotional dimension and an ecosystem of exploration: a universe to interpret. Today he leads the kitchen of Ristorante Famiglia Rana in Oppeano in the province of Verona - two Michelin stars - with a scientific laboratory alongside the kitchen where experimentation is an integral part of the creative process.
