Together with the festivities, the Canestrello festival of Vaie has since May 2023 opened “Gusto Valsusa”, the large review created by the Unione Montana to promote local typical products, which will have more than 20 events on the calendar. For numerous editions, the Canestrello festival has flooded the town’s streets with that sweet lemon aroma coming out of homes and workshops, whetting the appetite for that typical flavor that only this biscuit can give. Canestrello is in fact a biscuit of probable medieval origin, still prepared today in families for carnival and patron saint festivals. Its characteristic grid design comes from the “ferro” mold, that is, a tongs-like tool that is heated over an open flame. Between the two halves, small balls of dough are placed whose recipe, secret for every Vaie family, calls for a skillful dose of simple ingredients: flour, sugar, butter and eggs, to which the aroma of lemon zest is added.
