Place: Coggiola Coggiola celebrates in October Paletta e Dintorni, the festival dedicated to the paletta, the cured meat symbol of the Valsessera in the Biellese area. Coggiola, a village in Valsessera in the province of Biella, is linked to the paletta, a cured meat made from the pig's shoulder, salted, stuffed and aged according to the valley's ancient tradition, eaten cooked and remaining the community's identifying product. The festival celebrates paletta with stalls and food stands where the cured meat is cooked and served according to the traditional recipe, often accompanied by polenta, together with the other products of the valley, such as Macagn cheese, and the dishes of the Biellese mountain tradition, accompanied by local wines. The festival combines gastronomy with markets, live music and activities for families, in an autumn event that celebrates the flavours of Valsessera. Coggiola preserves a compact centre in the valley, land of mountains, woods and ancient traditions linked to livestock breeding and wool working, which in the Biellese area has a centuries-old history.
