Alessandria celebrates in November the Regional Truffle Fair together with the feast of the patron saint San Baudolino. Alessandria, the capital of southeastern Piedmont on the plain between Monferrato and the Apennines, combines the feast of the protective saint with the celebration of the truffle, a prized product of the woods and hills of the province. The fair fills the streets and squares of the center with stalls where the trifolau display freshly harvested truffles, and visitors follow the scent among the market stands. The food stands offer dishes that highlight truffles, from fresh pasta to risottos, from eggs to crostini, together with dishes of Piedmontese tradition and the great wines of the area, from Barbera to the wines of the Tortona hills. The feast of San Baudolino, the hermit saint and protector of the city, adds a religious and popular dimension to the fair, with celebrations, markets, and activities for families. The event brings together gastronomy with cultural events and live music. Alessandria preserves a historic center with the Cittadella, one of the best-preserved military fortresses in Europe, and the palaces that tell the story of the city, founded in the Middle Ages. The
