The regional listing describes the programme as follows: The traditional “Fìero di Sant” that takes place on the last weekend of October in the town which, together with the hamlets of Demonte and Pietraporzio, is one of the three Occitan municipalities of Piedmont, takes place within the walls of the nineteenth-century Forte Albertino in the tourist spa area of the Valle Stura di Demonte and sees as its undisputed protagonist the Sambucana sheep, one of the oldest and finest sheep breeds, a very versatile species that produces wool, meat and milk of excellent quality. The most valuable element of this breed, which can be considered native to the valley, is the Sambucano Lamb which, together with the Zeri Lamb (Lunigiana) and the Alpago Lamb (Treviso), is protected by Slow Food with a Presidio. These are animals raised according to a precise regulation for which all farms must obligatorily carry out summer grazing at a minimum altitude of 1800 metres and follo. It is organised by Comune.
