The Historic Cappone Fair of San Damiano d’Asti, in the heart of the Asti hills, is an event that keeps alive one of the most distinctive Piedmontese rural traditions linked to the Christmas period. The fair has been held regularly since 1947 and originated from the ancient custom of farmsteads raising a few capons intended for the holiday table or for sale in the December markets. The star is the Cappone Nostrano di San Damiano d’Asti, raised according to traditional practices. The animals are raised outdoors and their diet is traditionally based mainly on farm products, such as corn. The result is a tender and flavorful meat, especially appreciated in festive cooking. During the fair, breeders display and sell their capons, while an award ceremony highlights the best specimens. Gastronomic tradition dictates that it should especially be eaten boiled and accompanied by bagnetto piemontese or other sauces, while its broth is used for ravioli and stuffed pasta.
