In the small center of Mantovana, a hamlet of Predosa, Piedmont tradition comes to life around one of its most symbolic and celebrated dishes: mixed boiled meats. The boiled meat is prepared with selected cuts of beef, veal and cotechino, cooked slowly in aromatic broth, then served with the indispensable bagnet verde, a sauce made with parsley, anchovies, garlic and vinegar.
